My hatred of Peeps is palpable. Yet every year my children end up with boxes of these Easter staples. They love them. My youngest son will shove an entire Peep in his mouth, chew it up, and swallow down the whole mess in one bite. This recipe is by far the best way to transform these heinous marshmallow creatures into something that is actually edible, not to mention the best way to use up leftover Easter Peeps.
- 1 1/4 C flour
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 3/4 C packed brown sugar
- 4 Tbsp melted unsalted butter
- 1/2 Tbsp vanilla extract
- 1 egg
- 1 C chocolate chips
- 10-12 peeps marshmallows, assorted types (the more colorful the better!)
- Colorful sprinkles to jazz it up a bit (optional)
- Preheat oven to 350 degrees F. Grease an 8″ baking pan and line with a parchment sling on all fours sides.
- Combine flour, baking powder, baking soda, and salt in a small bowl, and set aside.
- In a medium bowl, add brown sugar, melted butter, vanilla extract, and egg, and whisk to combine. Add flour mixture to butter and sugar mixture. Mix with a wooden spoon until well-combined into a delicious mush. Fold in chocolate chips.
- Spread mixture into baking dish and pat down with wet fingers, if necessary. This is a thick and sticky batter, so you might have to fight it a little bit to get it all down in one neat layer. Bake for 15-18 minutes.
- Once the blondies are in the oven, it’s time to kill some peeps! Cut the peeps into half-inch chunks and mix with sprinkles, if using. Set aside in a bowl. After 15-18 minutes, take baking pan out of the oven and sprinkle the chopped up peeps and sprinkles over the blondies in the pan. Bake for another 5 or so minutes until peeps are good and melty. Watch this part carefully, as the peeps can burn pretty quickly and then you’ll have cremated peeps on your delicious blondies, rather than the sticky sweet goo that we’re looking for.
- Let peeps cool completely and remove from pan and cut into squares. Revel in the s’mores-like transformation of these nasty marshmallow creatures!
High-altitude variation:
- Increase flour to 1 C, 4 Tbsp.
- Decrease oven temperature to 325 degrees F.
- Increase cook time during the first bake for 5-8 minutes.
